Chicken Satay




Ingredients:
4 pieces chicken breast, cut into small cubes
Bamboo skewers (as needed)

For marinate:
5 shallots
2 garlic cloves
1 tsp coriander
3 candle nuts
1 tbs peanut butter
1 tsp tamarind powder
1 tsp salt
1 tsp tumeric powder
1 tbs palm sugar
Sweet Soy Sauce
1 tbs oil

Peanut Sauce:
250 gr roasted peanuts
1 tsp minced garlic
3 shallots
Red chili pepper (as needed)
1 tsp salt
3 candle nuts
3/4 cup water


Directions:

Blend all ingredients in a food processor except sweet soy sauce and vegetable oil.
In a medium bowl, mix chicken and marinate ingredients, add sweet soy sauce and oil.
Marinate for at least 1 hour.
Grill satay for about 15 mins and turn occasionally.

Peanut Sauce:
Blend all ingredients to a fine paste.

Serve satay with rice, peanut sauce, fried shallot and lime juice.

Klaapetart

Klaapetart is Indonesian version of coconut pudding. This is one of my favorite desserts of all time. Our family in Indonesia usually have this for Christmas or birthday celebration.



Ingredients:
5 egg yolk
300 gr sugar
1 can sweet condensed milk
1 can evaporate milk
8 tbs corn starch
8 tbs flour
3 cups fresh coconut juice
Meat of 3 fresh coconuts
1 + 1/2 cups Almonds (optional)
1 + 1/2 cup Raisins
Cinnamon
5 egg white
Rhum (Optional)

Directions:

Set the fresh coconut milk aside. In a large saucepan, mix the first 7 ingredients well and stir until thickened. Remove from heat.
Add 1 cup of almonds, 1 cup raisins and rhum, mix well.
Put mixture into a lightly greased casserole dish.

Beat egg whites until it becomes stiff, spread on top of the coconut mixture. Springkle almonds, raisin and cinnamon evenly on top.

Bake for 30-40 minutes (until golden brown), 350 F.

Cream Cheese Pound Cake

I love this recipe because in Indonesia, we love to put cheese in our cakes. When my mother in law made this cake, I knew I had to ask for the recipe. So here it is :)

Ingredients:
1 (8 oz) pkg cream cheese (room temperature)
6 eggs (room temperature)
3 cups of sugar
nuts (optional)
3 sticks margarine (room temperature)
1 tsp vanilla flavoring
3 c cake flour (box kind)

Directions:
Soft & cream margarine & cream cheese.
Stir in Sugar.
Add eggs & vanilla; blend until smooth.
Stir in cake flour. Blend mixture until doughy texture.
Pour in tube pan & bake for 1 1/2 hours at 300 oven temp
